Wash and pat dry your zucchini. Then, slice it, using your Mandoline on the thinnest setting.
Heat a large frying pan on medium-high. Once hot, pour the olive oil and add your sliced zucchini. Cover for 3-4 minutes, the zucchini will soften. Set aside.
Wash and pat dry the lemon thyme and basil. Chop the basil leaves and take the leaves out from the thyme stem. Set aside.
In a mixing bowl, whisk together the all-purpose flour, eggs and milk. Fold the cooked zucchini together with the crumbled goat cheese, shredded cheese and herbs (thyme & basil). Season with Salt and Pepper (To taste).
Bake for 40 minutes at 350F/180C. (Every oven heats differently, monitor your clafoutis from 35 min).
Once your Zucchini, Thyme, Basil & Goat Cheese Clafoutis is out of the oven, let it cool down for about 10 minutes. Then, Unmold onto your service platter. I like mine out of the oven. It can also be enjoyed cold so allow a couple of hours to be refrigerated. Serve with a salad on the side. Bon Appétit!
