Zucchini, Thyme, Basil & Goat Cheese Clafoutis

This Zucchini, Thyme, Basil & Goat Cheese Clafoutis is going to be the star at your dining table this Summer!

Ingredients
 

  • 1 1/2 Lbs (700 g) zucchini (3 Medium | Thinly Sliced)
  • 1 Tbsp (15 g) olive oil
  • 1/4 cup lemon thyme (Washed | Pat Dry)
  • 1/4 cup Fresh Basil (Washed | Pat Dry | Chopped)
  • 1/3 cup (40 g) all-purpose flour
  • 3 eggs
  • 7 oz (200 g) milk
  • 4 oz (115 g) goat cheese (Crumbled)
  • 4 oz (115 g) shredded cheese (Original Recipe used French Comté )
  • Sel Gris Mill (Season to Taste)
  • Pepper Mill (Season to Taste)

Instructions
 

CLAFOUTIS PREPARATION

  • Wash and pat dry your zucchini. Then, slice it, using your Mandoline on the thinnest setting.
  • Heat a large frying pan on medium-high. Once hot, pour the olive oil and add your sliced zucchini. Cover for 3-4 minutes, the zucchini will soften. Set aside.
  • Wash and pat dry the lemon thyme and basil. Chop the basil leaves and take the leaves out from the thyme stem. Set aside.
  • In a mixing bowl, whisk together the all-purpose flour, eggs and milk. Fold the cooked zucchini together with the crumbled goat cheese, shredded cheese and herbs (thyme & basil). Season with Salt and Pepper (To taste).
  • Pour your preparation into your Pie Mold.

BAKE!

  • Bake for 40 minutes at 350F/180C. (Every oven heats differently, monitor your clafoutis from 35 min).
  • Once your Zucchini, Thyme, Basil & Goat Cheese Clafoutis is out of the oven, let it cool down for about 10 minutes. Then, Unmold onto your service platter. I like mine out of the oven. It can also be enjoyed cold so allow a couple of hours to be refrigerated. Serve with a salad on the side. Bon Appétit!
