Ingredients
 

STEP 1

  • 4 shallot bulb (Chopped)
  • 4 garlic cloves (Chopped)
  • 1 bell pepper (Red | Washed | Chopped)
  • 16 oz (455 g) mushrooms (White + Baby Bella | Washed | Sliced )
  • 1 Tbsp (15 g) roasted garlic oil
  • 1/2 tsp (3 g) Sel Gris Mill

STEP 2

  • 14.50 oz (410 g) diced tomatoes (1 can | With Juice)
  • 15 oz (425 g) beans (1 can of Mixed BEans| Drained)
  • 2 Tbsp (10 g) chili powder (Chili Lime)
  • 2 tsp (4 g) ground cumin
  • 1 tsp (2 g) smoked paprika
  • 1 tsp (3 g) Roasted Garlic and Chive Herb blend
  • Pepper Mill

SERVE WITH...

  • 4 oz (115 g) sour cream
  • 1/2 lime (Zest + Juice)
  • 10 oz (283 g) basmati rice (Cooked)

Instructions
 

STEP 1

  • Peel and cut your shallots into quarters and transfer the pieces with the garlic cloves directly into your Eco Chop. Give it a few pulls to chop it to your liking. Repeat the process with the bell pepper. Set aside.
    4 shallot bulb, 4 garlic cloves, 1 bell pepper
  • Place your Large Round Mold on the top of a microwave safe plate. Add your chopped onion/garlic/bell pepper/sliced mushrooms and mix in the garlic olive oil and sel gris salt. Cover with Octagonal Bonmat. Microwave on high for 3 minutes.
    16 oz mushrooms, 1 Tbsp roasted garlic oil, 1/2 tsp Sel Gris Mill

STEP 2

  • Carefully remove the Octagonal Bonmat. Add the cans of diced tomatoes and mixed beans along with the spices (chili powder, ground cumin, smoked paprika and roasted garlic and chive herb blend). Season with Pepper (to taste). Stir until combined. Microwave on high for 7 minutes.
    14.50 oz diced tomatoes, 15 oz beans, 2 Tbsp chili powder, 2 tsp ground cumin, 1 tsp smoked paprika, 1 tsp Roasted Garlic and Chive Herb blend, Pepper Mill
  • Carefully remove the Octagonal Bonmat. Give it a stir and microwave for an additional 5 minutes (uncovered)
  • Once your Vegetarian Mushroom Chili is out of the microwave, let it cool down for about 5-10 minutes. NOTE: Do not drain the additional liquid, it will be absorbed by all your vegetables. Serve and Enjoy with the lime sour cream and basmati rice. Bon Appétit!
