Owl-O-Ween Garlic & Cauliflower Pasta (Halloween)

This devilishly clever recipe boasts a brainy combination of garlic-infused goodness and roasted cauliflower, giving your taste buds a true Halloween treat! Don't be scared to try it out!

Ingredients
 

PASTA

  • 8.80 oz (250 g) black squid ink pasta (Spaghetti | Cooked al dente)

ROASTED CAULIFLOWER

  • 1 cauliflower (Small)
  • 1 Tbsp (15 g) super color food powder (Ebony Carrot by Suncore Foods)
  • 2 Tbsp (28 g) olive oil (Plus more for drizzle)
  • 1 tsp (6 g) Sel Gris Mill (Season to Taste)
  • 1 tsp (5 g) super color food powder (Ebony Carrot by Suncore Foods)

GARLIC OIL SAUCE

  • 3 Tbsp (40 g) Greek Olive oil (Original Recipe uses 1)
  • 4 Garlic Cloves (Chopped | Original Recipe uses 2)
  • 1 tsp (5 g) Roasted Garlic and Chive Herb blend
  • Sel Gris Mill (Season to Taste)
  • Pepper Mill (Season to Taste)

DECORATION

  • Mozzarella cheese (Pearls | Sliced)
  • black olives

Instructions
 

  • Please note that the original recipe cooks the cauliflower in a frying pan. Since I needed mine to be slightly pink, I roasted it and it turned out great!

ROASTED CAULIFLOWER PREPARATION

  • Preheat the oven to 450F/230C. Place your Fleximat on the top of your medium perforated baking sheet. Set aside.
  • Rinse the cauliflower and slice the bottom of the core off the cauliflower.
  • Fill a large pot with water (enough to submerge the cauliflower) and bring it to a boil. Add the super color food powder. Carefully place the cauliflower in the pot, head-side up (NOTE: you can use a spider spoon to hold it down), cover and simmer over medium heat for 8 minutes.
  • Carefully lift the cauliflower from the water, using a spider spoon, and keep it there, stem side down to cool down for about 15 minutes until it is dry to the touch. Then, place it on top of your Fleximat.
  • Mix in super color food powder together with the olive oil and salt. Rub it all over your cauliflower. 
  • Roast for 40 minutes at 450F/230C. It is ready when it is tender and lightly "golden". NOTE: The cooking time will depend on the size of your cauliflower. 

GARLIC OIL SAUCE PREPARATION

  • In a medium sauce pan, add the olive oil and chopped garlic. Turn the heat to medium-low. Once the garlic is sizzling, add the roasted garlic and chive herb blend. Season with Salt and Pepper (to taste). Give it a stir and set aside.
    3 Tbsp Greek Olive oil, 4 Garlic Cloves

PASTA PREPARATION

  • Cook your pasta al dente according to package instructions: 8 minutes for me. Drain and add it to your garlic oil preparation. Stir until the pasta is well-coated.

ASSEMBLY

  • To make the eyes, you can use a straw to cut a hole through the mozzarella and the olive.
  • Using a fork, place the linguine into a few swirls around the plate. Place small pieces of your cauliflower "brain" around. Then, arrange the sliced mozzarella for the "eyes", topped them with a piece of black olive. Serve right away to enjoy your Spooky Garlic Pasta with Cauliflower. "BONE" Appétit!
