  • 8 tbsp (115 g) butter (Softened | At Room Temperature)
  • 1 egg yolk
  • 3 1/2 tbsp (52 g) bottled water (At Room Temperature)

CORONATION QUICHE FILLING

  • 6 1/2 oz (180 g) Fresh Baby Spinach Leaves (Cooked)
  • 2 oz (60 g) broad beans (Cooked | Shelled | Lima Beans)
  • 1 Tbsp fresh tarragon (Washed | Chopped)
  • 2 eggs
  • 4 1/2 oz (125 g) milk
  • 6 1/4 oz (175 g) heavy whipping cream
  • Sel Gris Mill
  • Pepper Mill (Timut Pepper)
  • 3 1/2 oz (100 g) sharp cheddar
  • 1 egg (To Brush Before Baking)

Instructions

HOMEMADE PIE DOUGH (MAKES 1)

CORONATION QUICHE FILLING

  • Heat a frying pan on medium. Once hot, add the baby spinach leaves. Cover and cook for about 2-3 minutes. When ready, remove from heat and transfer to a kitchen towel to absorb the spinach water. Set aside.
  • Cook your broad beans as indicated on the packet. 6 minutes for me. Drain and set aside.
  • Use the Mini Herb Chopper to thinly chop the fresh tarragon. Set aside.
  • In a mixing bowl, whisk together the eggs, milk, heavy whipping cream and chopped tarragon. Season with Salt and Pepper.

ASSEMBLY

  • Preheat oven to 350F/180C.
  • Take your Round Mold out of the refrigerator.
  • Arrange the cheddar on top of the crust (keeping some for the finishing). Layer the cooked spinach and broad beans. Gently pour over your preparation and add the remaining of cheddar
  • Brush with your egg wash on the crust around.

BAKE!

  • Bake for 30 minutes at 350F/180C. (Every oven heats differently, monitor your Quiche from 25min). It is ready when it has puffed-up and golden brown around the edges.
  • Once your Coronation Quiche is out of the oven, let it cool down for about 20 minutes. Then, slide them onto your service platter. Enjoy, Bon Appétit and Long Live His Majesty The King!
