Looking to add a twist to your Halloween festivities? These roasted sweet potatoes shaped like jack-o-lanterns are not only cute but also delicious! They are perfect for a fun family activity. Who's ready to carve out some flavor?
Bring a large pot of water to a boil. Peel and cut the sweet potatoes in half, width wise, then drop into the boiling water. Bring it back to a boil and let it cook for 5 minutes and drain.
2 Sweet Potatoes
Carefully cut the sweet potatoes into 1/2" | 1 cm thick slices.
Using a pumpkin cookie cutter, cut the shapes into the sweet potatoes. NOTE:The shapes will not be fully cut, that's perfectly fine.
Arrange the sweet potatoes onto your Fleximat. Season with Greek oregano and sel gris. Rub the olive oil to coat.
Roast for 30 minutes at 400F/200C. (Every oven heats differently, monitor your veggies from 25 minutes). It is ready when the sweet potatoes have softened.
