NOTE:This recipe makes 2 small glasses or 1 large tumbler.
PUMPKIN JUICE PREPARATION
In a food processor or blender, add the pumpkin purée, pineapple juice, apple cider, blue agave, pumpkin pie spice, and vanilla bean paste. Pulse to combine. NOTE:The Pumpkin Juice will be somewhat thick that's completely normal. It is very important to taste to adjust to your liking. If you like it more sweet, add more blue agave. If you'd like it more runny add more pineapple juice.
VANILLA BEAN CREAM PREPARATION (OPTIONAL)
NOTE:Place the mixing bowl along with the beaters in the freezer for 15 minutes prior preparing the vanilla bean cream. This will help your whipped cream to be stiff and fluffy.
In a mixing bowl, beat the heavy cream until stiff peaks. Fold the powdered sugar until smooth and fluffy. Keep refrigerated until you assemble your pumpkin juice. IMPORTANT:Do not overmix.
ASSEMBLY
Pour the pumpkin juice into your favorite Harry Potter glass or mug. Then, add dollops of vanilla bean cream over the pumpkin juice. Enjoy Wizards ; Magic always happens in the kitchen!
