PUMPKIN SPICE PANCAKES

  • 8.82 oz (250 g) all-purpose flour
  • 2 tsp (8 g) baking powder
  • 1 tsp (4 g) baking soda
  • 1 Tbsp (12 g) sugar
  • 1 tsp (2 g) ground cinnamon
  • 1/2 tsp (1 g) pumpkin pie spice (Homemade recipe HERE)
  • 1 egg
  • 12.88 oz (365 g) milk
  • 8.54 oz (242 g) pumpkin purée
  • 1.41 oz (40 g) vegetable oil
  • 1 tsp (5 g) vanilla bean paste (my personal addition)

CINNAMON SUGAR SWIRL

  • 2 oz (55 g) butter (Softened | At Room Temperature)
  • 2 oz (55 g) granulated sugar
  • 2 tsp (4 g) ground cinnamon
  • 1 Tbsp pancake batter

CINNAMON BUTTER (MY PERSONAL ADDITION)

  • 4 oz (115 g) butter (Softened | At Room Temperature)
  • 2.12 oz (60 g) powdered sugar
  • 1 1/2 tsp (3 g) ground cinnamon
  • 1.41 oz (40 g) honey
  • 1/2 tsp (2.5 g) vanilla bean paste
  • 1/16 tsp (0.38 g) sea salt

Instructions
 

PUMPKIN SPICE PANCAKES BATTER PREPARATION

  • In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, ground cinnamon and Pumpkin Pie Spice. Make a well, add the egg, milk, pumpkin purée, vegetable oil and vanilla bean paste. Mix until it is all incorporated. NOTE: Do not overmix to keep them fluffy. Set aside.
    8.82 oz all-purpose flour, 2 tsp baking powder, 1 tsp baking soda, 1 Tbsp sugar, 1 tsp ground cinnamon, 1/2 tsp pumpkin pie spice, 1 egg, 12.88 oz milk, 8.54 oz pumpkin purée, 1.41 oz vegetable oil, 1 tsp vanilla bean paste

CINNAMON SUGAR SWIRL PREPARATION

  • In a medium size bowl, combine the softened butter together with the sugar and ground cinnamon. Then, add 1 tablespoon of the pancake batter, then mix everything until smooth. Fill a piping bag with the preparation and snip off the tip. Set aside.
    2 oz butter, 2 oz granulated sugar, 2 tsp ground cinnamon, 1 Tbsp pancake batter

COOK!

  • Heat your Pancake pan on Medium 5 minutes prior starting making your pancakes and slightly oil the surface with a bit of butter.
  • Once the butter is melted, scoop the batter onto the pan, using approximately 1/4 cup for each pancake. Immediately swirl on the filling over the pancakes and let it cook until small bubbles start to form, about 1-2 minutes. Then add a small teaspoon of water to the edge of the pan, and immediately put the lid on the pan and let it cook for another 1-2 minutes. NOTE: Flipping the pancake can ruin the swirl design, so using this steaming method helps cook the pancakes thoroughly without needing to flip the pancake. Repeat with the remaining ingredients, making sure to butter the pan between adding in pancakes. Set aside.

CINNAMON BUTTER PREPARATION

  • In a mixing bowl, beat the softened butter together with the powdered sugar, ground cinnamon, honey, vanilla bean paste and sea salt. Fill a piping bag with a star tip on and pipe on top of the warm pancakes. Enjoy! Autumn Leaves & Pumpkins Please!
