Ghostly French Mini Fougasse (Halloween)

Ingredients
 

  • 15.35 oz (435 g) all-purpose flour
  • 2 tsp (12 g) sea salt
  • 1 tsp (4 g) sugar
  • 1 tsp instant yeast
  • 12.52 oz (355 g) water (Lukewarm)
  • 1 oz (28 g) butter (Melted)
  • 1 oz (28 g) avocado oil
  • 1 Tbsp olive oil (To brush)

DOUGH PREPARATION

  • In your mixing bowlwhisk the all-purpose flour, sea salt, sugar and instant yeast together. Make a well and add the lukewarm water, melted butter and avocado oil. Gently stir inwards going outwards with your spatula. NOTE: The dough does not need to be smooth, but should be free of dry spots.
    15.35 oz all-purpose flour, 2 tsp sea salt, 1 tsp sugar, 1 tsp instant yeast, 12.52 oz water, 1 oz butter, 1 oz avocado oil

RISE

  • Loosely cover and let it rise at room temperature for 3 hours at room temperature or 2 1/2 hours in a turned off preheated oven (100F/37C). It will double in size.
  • Refrigerate your bowl overnight, this will enable the gluten to develop and give you a bread with a wonderful aroma. The dough is good up to 15 days.

ASSEMBLY

  • Take the dough out of the refrigerator and transfer it onto your Roul'Pat™.
  • Divide it into 12 segments and let dough rest for 10 minutes before handling it.
  • Roll each dough into an oblong ghost shape, about 4" | 10 cm long. With a sharp knife or a pizza cutter, cut three 1" | 2.50 cm slits for the eyes and mouth. Lift the dough off of your work surface and gently pull and stretch to create your fun ghost faces.
  • Place each ghost directly on your Bonmat at least 2" | 6 cm apart from each other. Cover with a clean kitchen cloth and let rise for 20 minutes.

BAKE!

  • Preheat oven to 425F/220C. Brush your bread with olive oil, it will give them some crispiness keeping the center soft.
    1 Tbsp olive oil
  • Bake for 15 minutes at 350F/180C. (Every oven heats differently, monitor your bread from 12 minutes). It is ready when lightly golden brown around the edge, the top staying white.
  • Once your Ghostly French Mini Fougasse are out of the oven, let them cool down completely on your baking sheet. Enjoy with your favorite seasonal soup or dipped in melted chocolate (that's very good also!). Bon Appétit!
