Blueberry Bagel Bread Pudding (CMUM)

Ingredients
 

  • 4 blueberry bagels (Diced | 1 inch / 3 cm cubes)
  • 1 1/3 cups (315 g) heavy whipping cream
  • 1/3 cup (80 g) milk
  • 2 eggs
  • 1/3 cup (65 g) sugar
  • 1 tsp (5 g) vanilla bean paste
  • 1 cup (150 g) blueberries (Fresh)

Instructions
 

BREAD PUDDING PREPARATION

  • Dice your blueberry bagel into about 1"/3cm cubes. Set aside.
  • In your Mixing Bowlwhisk together the heavy whipping cream and milk with the eggs, sugar and vanilla bean paste.
  • Fold your diced blueberry bagel. Gently coat them with your egg mixture. Cover and let it soak for 30 minutes, folding once more half way.

BAKE!

  • Preheat oven to 350F/180C. Place your Flexipan® Tree Mold on the top of your Medium Perforated Baking Sheet.
  • Mix in your fresh blueberries with your bagel and pour your bread pudding preparation into your Flexipan® Tree Mold.
  • Bake for 45 minutes at 350F/180C. (Every oven heats differently, monitor your bread pudding from 40min). It is ready when golden on top.
  • Once your Blueberry Bagel Bread Pudding is out of the oven, let it cool down for about 10 minutes. Then, Unmold and Serve warm! Enjoy! Bon Appétit!
