Trader Joe’s Pumpkin Brioche Bread Pudding

Ingredients
- 16.8 oz (475 g) Trader Joes Pumpkin Brioche Twist (1 Loaf | Diced into 1in./3cm cubes)
- 2 cups (475 g) heavy whipping cream
- 1/2 cup (125 g) milk
- 3 eggs
- 1/4 cup (50 g) sugar
- 1 tsp (5 g) vanilla bean paste
- 1 1/2 tsp (3 g) ground cinnamon
- 1/4 tsp (0.5 g) ground ginger
- 1/8 tsp (0.25 g) ground nutmeg
- 1/8 tsp (0.25 g) ground all spice
- 1/4 cup (45 g) dark chocolate chips
Instructions
BREAD PUDDING PREPARATION
- Dice your Brioche into about 1"/3cm cubes. Set aside.
- In your Mixing Bowl, whisk together the heavy whipping cream and milk with the eggs, sugar and vanilla bean paste.
- Mix in all the spices (cinnamon, ginger, nutmeg, all spice). Then, fold the diced brioche. Gently coat them with your egg mixture. Cover and let it rest up to one hour, folding once more half way.
BAKE
- Preheat oven to 350F/180C. Place your Fluted Round Flexipan® Mold on the top of your Medium Perforated Baking Sheet.
- Mix in your chocolate chips with your brioche and pour your bread pudding preparation into your Flexipan®.
- Bake for 45 minutes at 350F/180C. (Every oven heats differently, monitor your bread pudding from 40min). It is ready when golden on top.
- Once your Trader Joe's Pumpkin Brioche Bread Pudding is out of the oven, let it cool down for about 20min. Then, Unmold, Serve and Enjoy! Bon Appétit!
