Three-Cheese Bacon Muffins

Yesterday was my Dad’s Birthday and if he was still with us, I know he would have devoured these muffins. He was the true definition of an Epicurien.

When I was growing up and living with Mom and Dad around the world, I felt lucky to be able to try all kinds of food and spices. It really set-up the tone for the taste buds I have today. Even though you could not find a box of cookies in the house!

Most of you must know by now, I am a big fan of Lauren’s Cuisine, and over the Summer she created this recipe which I Love.

Three-Cheese Bacon Muffins

At the dinner table, nothing can go wrong when you have both bacon and cheese served together!

Ingredients
 

  • 3 eggs
  • 4 pieces of Laughing Cow cheese
  • 3/4 cup (200 g) milk
  • 1/4 cup (50 g) Tuscan oil (LINK under Equipment)
  • 6.5 oz (180 g) flour (sifted)
  • 2.5 tsp (12 g) baking powder
  • 3.5 oz (100 g) goat cheese
  • 3/4 cups (75 g) parmesan
  • 3/4 cup (180 g) bacon (crumble)

Instructions
 

  • Preheat oven at 350F/180C.
  • In a mixing bowl, roughly whisk together, eggs and Laughing Cow cheese. Then, add milk and oil.
  • Slowly, add flour and baking powder. Whisk until smooth.
  • Using a spatula, incorporate goat cheese, parmesan and bacon.
  • Pour over your batter into the Flexipan® using a mini ladle.
  • Bake for 25 minutes at 350F/180C. (Every oven heats differently, monitor your muffins from 20min)
  • Once your muffins are out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy!
