Savory Herbed Chicken Bagel Sandwich

Whenever I need a good bread recipe, I usually look up to Amel (@amel_mkahli) because her recipes are wonderful. This is her bagel recipe which you can find directly on her instagram (@amel_mkahli), right HERE!
To note: The baking soda added to the bagel water bath adds more fluffiness to the bagel once cooked. It also allows the crust to form easily and give it a little “pretzely” taste.

BAGEL DOUGH
- 3/4 cup (180 g) Mineral water (Lukewarm)
- 4 tsp (20 g) sugar
- 1 1/4 tsp (6 g) active dry yeast
- 2 3/4 cups (350 g) flour
- 2 1/4 tsp (12 g) salt
- 1 1/2 tbsp (25 g) olive oil
- 1 egg (Beaten for the Eggwash)
BAGEL WATER BATH
- 3 Qts (3 l) Water
- 2 Tbsp (30 g) Demerara Sugar
- 1/3 cup (40 g) baking soda
- 2 tsp (10 g) baking soda
SAVORY HERBED CHICKEN
- 2 lbs (900 g) Chicken Thighs (Chopped)
- 6 oz (170 g) Basil Pesto
- 1 tbsp (14 g) sweet basil olive oil
- 1 tsp (5 g) White balsamic Vinegar
- 2 (6 g) Garlic Cloves (Chopped)
- 1 tsp (0.1 g) Dried mint leaves
- 1/2 tsp (1 g) onion powder
- 1/4 tsp (0.5 g) ground cardamom
BREAD CRUMBS
- 1 egg (Beaten)
- 1 cup (108 g) bread crumbs
TOPPINGS
- 6 Mini Heirloom Tomatoes (Washed & Sliced)
- 6 tbsp Citrus Coriander Aioli
- Lavender Salt (Season to Taste)
Instructions
HOMEMADE BAGEL BREAD (MAKES 8)

SAVORY HERBED CHICKEN
- Place your Large bonMAT™ on the top of your Large Perforated Baking Sheet.
- In a blender or food processor, grind the chicken tighs together with all the spices (Basil Pesto, Sweet Basil Olive Oil, White Balsamic Vinegar, Garlic Gloves, Dried Mint Leaves, Onion Powder and Ground Cardamom). Then, split them into 8 flatten balls.
- Bake for 12 minutes or more depending on the thickness at 400F/200C. Use the Digital Thermometer to ensure the chicken is cooked through at 165°F/75C.
- Once your Chicken is out of the oven, let it set for a couple of minutes.
ASSEMBLY
- Slice your bagels in two and butter each sides. Place the Chicken Pesto Patty in, add the tomatoes on top and a tablespoon of the Citrus Coriander Aioli. Season with Lavender Salt. Enjoy & Bon Appétit!
