Savory Feta Cheese and Fresh Mint Cake

I adore baking this cake especially when I have so much fresh mint in the garden and cannot survive on drinking Mojito everyday… LOL

This is I think the very first recipe I tried from Micheline (@cookingmicheline). It did not disappoint and been making it every Summer since then! You will find the link to Micheline’s recipe right HERE!

Savory Feta Cheese and Fresh Mint Cake

This Savory Feta Cheese and Fresh Mint Cake will swoop your dining guests away. It can also be enjoyed cold perfect for a picnic day!

Ingredients
 

  • 1/2 cup (20 g) Fresh Mint Leaves
  • 3 eggs
  • 1/3 cup (100 g) sweet basil olive oil
  • 1/2 cup (120 g) milk
  • 1 1/2 cup (185 g) flour (sifted)
  • 2 Tbsp (15 g) flour (sifted)
  • 2 1/2 tsp (12 g) baking powder
  • Lavender Salt
  • Pepper Mil
  • 8 oz (225 g) Feta Cheese (Diced)
  • 2 Tbsp (4 g) Za'atar Herbs

Instructions
 

  • Preheat oven at 375F/190C.
  • Wash thourouly the mint and pat dry with a kitchen towel. Then, using the mini herb chopper, chop the mint as desired. Set aside.
  • In the mixing bowl, whisk together eggs, sweet basil olive oil and milk.
  • Then, add the flour, baking powder and Lavender Salt and Pepper.
  • Using a spatula, fold in your diced Feta Cheese and chopped mint leaves.
  • Place your Loaf Flexipan® Mold on the top of your Medium Perforated Baking Sheet
  • Pour the batter into your flexipan® by spreading gently until smooth. Then, sprinkle your Za'atar herbs on top.
  • Bake for 30 minutes at 375F/190C. (Every oven heats differently, monitor your cake from 25min)
  • Once your Savory Feta Cheese and Fresh Mint Cake is out of the oven, let it cool down for about 10min. Then, Unmold, Serve and Enjoy!
