Plum Upside Down Cake

Marion (@novice_en_cuisine) made me discover her recipe a Summer ago. She baked it with Cherries and looked so delicious. I have kept her advice to keep it in the refrigerator as it is perfect with this heat! You will find Marion’s recipe right HERE!

Plum Upside Down Cake

This Plum Upside Down Cake is so colorful and best served cold out of the refrigerator. Perfect to enjoy this Summer!

Ingredients
 

  • 2 plums
  • 3 eggs
  • 1/2 cup (100 g) sugar
  • 2 tbsp (30 g) milk
  • 2 1/2 tbsp (35 g) Vegetable Oil
  • 1 tsp (4 g) vanilla extract
  • 1 1/4 cups (160 g) flour (sifted)
  • 2 1/2 tsp (12 g) baking powder

Instructions
 

  • Preheat oven to 350F/180C.
  • Wash your plums under cold water and pat them dry. Then, slice them lengthwise, remove the center and set aside.
  • In a mixing bowlwhisk together Eggs, Sugar, Milk, Vegetable Oil and Vanilla Extract.
  • Slowly, add flour and baking powder. Whisk until smooth.
  • Place your Loaf Flexipan® Mold on the top of your Medium Perforated Baking Sheet
  • Arrange the sliced plums face down at the bottom of your flexipan®. Pour the batter on top by spreading gently with a spatula.
  • Bake for 35 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 25min)
  • Once your Plum Upside Down Cake is out of the oven, let it completely cool down, place it in the fridge before unmolding. Then, Serve and Enjoy!
