Pesto Rosso & Verde Mini Muffins
This is one of my Friend Marion’s (@novice_en_cuisine) favorite recipe. It is so quick to prepare and bake, you are going to be blown away! You can find Marion’s recipe right HERE!

Pesto Rosso & Verde Mini Muffins
Ingredients
- 2 eggs
- 1/2 cup (125 g) yogurt (Europeen Style)
- 2 Tbsp (30 g) Pesto
- 2 Tbsp (30 g) Pesto Rosso
- 2/3 cup (80 g) flour (Sifted)
- 1 1/4 tsp (6 g) baking powder
Instructions
- Preheat oven to 350F/180C.
- In a mixing bowl, whisk your eggs with the yogurt.
- Add the Flour and Baking Powder. Mix until combined.
- Then, split the batter into two smaller bowls. Combine the Pesto Verde and Pesto Rosso in each respective bowl.
- Place your Coquille Flexipan® Tray on the top of your Medium Perforated Baking Sheet.
- Scoop a tablespoon of each batter into each well of your Flexipan®.
- Bake for 12 minutes at 350F/180C. (Every oven heats differently, monitor your Muffins from 10min)
- Once your Pesto Rosso and Verde Mini Muffins are out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy! Bon Appétit!
