Peach & Orange Blossom Financiers
I’d like to believe (maybe), that I do have the will power not to eat everything I bake ; however, this does not apply to Financiers.
Being a huge tea drinker, and sometimes a Coffee drinker when Mom sends me my Vanilla Nescafé from France, (Ima when you read this, could you add it to the list, merci!) I need to have a little snack with it.
It’s been proven that Lauren‘s Financiers are the ones I like best, so I was really excited to find this recipe, where I could use my last peaches of the season.

Peach & Orange Blossom Financiers
The delicate brown butter flavor of this French Almond cake will win you over after one bite!
Equipment
Ingredients
- 3 peaches (diced)
- 6 oz (170 g) butter (melted)
- 4 oz (120 g) icing sugar (sifted)
- 2 oz (50 g) flour (GF or regular) (sifted )
- 5 oz (140 g) almond flour (sifted)
- 6 oz (170 g) egg whites (room temperature)
- 1 tbsp orange blossom extract
Instructions
- Preheat oven at 350F/180C.
- Wash and dice the peaches. Set aside.
- In a small sauce pan, heat butter on low until golden brown. Set aside.
- In a mixing bowl, whisk together icing sugar, flour and almond flour.
- Using a spatula carefully fold in the egg whites.
- Add, brown butter, the orange blossom extract and peaches.
- Pour your batter into the flexipan® with the mini ladle.
- Bake for 38 minutes at 350F/180C. (Every oven heats differently, monitor your financiers from 25min)
- Once your financiers are out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy!
