Peach Mascarpone Savarin
Smooth, creamy mascarpone is the perfect ingredient to give your dessert a more luxurious feel, and even better when paired with sweet peaches topped over with a homemade Peach Sirop.
I came across Adda’s culinary blog a while back. She is totally amazing, originally from Italy living in Provence, all her recipes are like a Mediterranean journey.

Peach Mascarpone Savarin
Sweet peaches paired with Mascarpone is giving this savarin a burst of flavors to delight your Summer Afternoons.
Ingredients
SAVARIN
- 2 peaches
- 10 oz (280 g) mascarpone
- 1/2 cup (100 g) sugar
- 4 eggs
- 1 3/4 cups (220 g) flour
- 1/3 cup (40 g) almond flour
- 1 tsp (4 g) baking powder
- 1/8 tsp (0.75 g) salt
PEACH SIROP
- 3/4 cup (180 g) Mineral water
- 1/4 cup (50 g) sugar
Instructions
- Preheat oven at 350F/180C.
SAVARIN
- In a mixing bowl, whisk together sugar, eggs and mascarpone, until smooth.
- In another mixing bowl, whisk together flour, almond flour, baking powder and salt.
- Then, combine the mascarpone mixture to the dry ingredients. Whisk until smooth.
- Pour your batter into the flexipan®.
- Wash and slice the peaches into 5 slices each. And slide them at the top of the batter. Do not discard the center or extra pieces, we will use them for the sirop.
- Bake for 40 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 30min)
- Once your savarin is out of the oven, let it cool down for about 10min. Then, Unmold and brush your peach sirop over it. Serve and Enjoy!
PEACH SIROP
- In a small sauce pan, add water, sugar and the discards from the peaches, stir and let it boil for 15min. Then, turn the stove off.
