In a mixing bowl, whisk together sugar, eggs and mascarpone, until smooth.
In another mixing bowl, whisk together flour, almond flour, baking powder and salt.
Then, combine the mascarpone mixture to the dry ingredients. Whisk until smooth.
Pour your batter into the flexipan®.
Wash and slice the peaches into 5 slices each. And slide them at the top of the batter. Do not discard the center or extra pieces, we will use them for the sirop.
Bake for 40 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 30min)
Once your savarin is out of the oven, let it cool down for about 10min. Then, Unmold and brush your peach sirop over it. Serve and Enjoy!
PEACH SIROP
In a small sauce pan, add water, sugar and the discards from the peaches, stir and let it boil for 15min. Then, turn the stove off.
