Oven Baked Lime Pancakes
Since I have discovered I can bake pancakes directly in the oven, it’s been my Favorite Brunch item to prepare!
Freddy (@la_dinette_de_Fred) is always very keen on creating a fun visual illusion when she is showcasing a new recipe. I loved her idea of a Pancake disguised into a “Waffle Trompe l’Oeil”. As always, you can find Fred’s recipe right HERE!

Oven Baked Lime Pancakes
Ingredients
- 2 cups (250 g) flour
- 2 1/2 tsp (12 g) baking powder
- 1/3 cup (70 g) sugar
- 2 eggs (Beaten)
- 1 cup (250 g) milk
- 2 Limes (Juice & Zest)
Instructions
- Grate the zest and using the citrus press, collect the lime juice. Set aside.
- In a mixing bowl, whisk together the flour, baking powder and sugar.
- Make a well, add the beaten eggs, lime zest and juice.
- Gently start mixing inwards going outwards with your mini whisk.
- Add a splash of milk at a time. Continue mixing until incorporated.
- Let your batter rest at room temperature for about 20 minutes. This will allow the milk to be converted into buttermilk, giving your pancake extra fluffiness.
- Meanwhile, preheat oven to 350F/180C.
- Place your Waffle Flexipat® Tray on the top of your Medium Perforated Baking Sheet.
- Pour the batter into the Flexipat® and even it out with your Offset Mini Spatula.
- Bake for 10 minutes at 350F/180C. (Every oven heats differently, monitor your pancake from 8min)
- Once your Pancakes are out of the oven, unmold right away. Serve, Enjoy & Bon Appétit!
