- 2 1/2 oz (70 g) milk (Lukewarm)
- 1 1/8 tsp (3.5 g) instant yeast (1/2 packet of 7g)
- 1 1/2 cups (190 g) all-purpose flour
- 1/16 tsp (0.38 g) sea salt
- 1/4 cup (50 g) sugar
- 1 egg
- 1 orange zest (Large Orange)
- 3 Tbsp (40 g) butter (Softened | At Room Temperature)
- 1 Tbsp (15 g) Orange Blossom Water
Instructions
- Place your Twisted Crown Flexipan® Mold on the top of your Medium Perforated Baking Sheet. Set Aside.
BRIOCHE PREPARATION
- Add the milk into a microwave safe bowl. Heat for 30 seconds or until it is lukewarm.
- In the bowl of your stand mixer, add all your dry ingredients in this order: Instant yeast, all purpose flour, sea salt and sugar. Whisk together to sift for about 30 seconds.
- Make a well, add the eggs, orange zest and the lukewarm milk. knead with the dough hook for about 3 minutes on the lowest setting of your stand mixer. Once the ingredients are almost combined, add the softened butter and increase the speed to the second lowest setting: knead for 10 minutes. The dough will be sticky.
RISE & ASSEMBLY
- Transfer the dough into a clean bowl, cover with a plastic wrap and let it rise for about 2 hours at room temperature or 1 1/2 hours in a turned off preheated oven (100F/37C). It will double in size.
- Once the dough has doubled, scrape it out directly into your Twisted Crown Flexipan® Mold and add the trinkets. Let it rise for another 1 hour at room temperature or 45 minutes in a turned off preheated oven (100F/37C).
BAKE!
- Preheat oven to 350F/180C.
- Bake for 30 minutes at 350F/180C. (Every oven heats differently, monitor your Brioche from 25min). It is ready when golden brown and does not feel hallow to the touch.
- Once your Orange Blossom King's Brioche is out of the oven, let it cool down directly in the mold 10 minutes before demolding onto your cooling rack. Enjoy & Bon Appétit!
