Olive Oil Cake with Apples

When I close my eyes and think about “olive cake”, I visualize the Italian country side surrounded by olive trees. I can hear the crickets singing their melodies, the Men working in the field. And the distant voices of the Mamas going on about things in the kitchen.

This Scrumptious cake has all these memories in it. I fell in love with the texture and it is beautifully balanced with the perfectly cooked apples.

My Friend and Esteemed Guy Demarle Colleague from France, Christèle (@christele_dans_vos_assiettes) made this cake some time ago. And like all her recipes it is unique and delicious. Olive Oil Cake with Apples

This Delicious Apple Cake has so much to offer in terms of flavors. Using the best quality Olive Oil there is, will take you there.

Ingredients
 

  • 3 eggs
  • 1/2 cup (100 g) sugar
  • 1/3 cup (80 g) Meyer Lemon Oil
  • 1/2 cup (120 g) milk
  • 1 1/2 cup (200 g) flour
  • 1 1/4 tsp (6 g) baking powder
  • 3 apples (Peeled & Diced)

Instructions
 

  • Preheat oven to 350F/180C.
  • In the bowl of your stand mixer beat the eggs with the sugar for about 5 min (Medium speed). Until it has doubled in volume.
  • Add the Meyer Lemon Oil and then, add the milk. Continue to beat for a couple of minutes.
  • Then, whisk in the flour and baking powder.
  • Add your diced apples to the batter and pour over your preparation into the Flexipan®.
  • Bake for 30 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 25min)
  • Once your cake is out of the oven, let it cool down for about 10min before unmolding. Then, flip it over. Serve and Enjoy! Bon Appétit!
