Mascarpone Apple Muffins

Mascarpone Apple Muffins
Ingredients
- 4 eggs
- 1/2 cup (100 g) Sugar
- 8 oz (225 g) Mascarpone Cheese
- 1 cup (125 g) flour
- 2 1/2 tsp (12 g) baking powder
- 1 apple (Peeled, Sliced)
- 3 (30 g) Lotus Cookies (Speculoos, Crumbled)
Instructions
- Preheat oven to 350F/180C.
- In a mixing bowl, beat the eggs with the sugar for about 2 minutes (Medium speed), until light and fluffy.
- Add the Mascarpone cheese. Beat for another 2 minutes (Medium speed).
- Then, whisk in the flour and baking powder.
- Place your Mini Bon Flexipat® Tray on the top of your Medium Perforated Baking Sheet.
- Bake for 18 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 15min).
- Once your Apple Mascarpone Muffins are out of the oven, let them completely cool down before unmolding. Enjoy & Bon Appetit!
