These Mascarpone Apple Muffins are perfect for an afternoon snack. Recipe approved by everyone during any season!

Preheat oven to 350F/180C.
In a mixing bowl , beat the eggs with the sugar for about 2 minutes (Medium speed), until light and fluffy. Add the Mascarpone cheese. Beat for another 2 minutes (Medium speed).
Then, whisk in the flour and baking powder. Add two apple slices into each well of your Flexipat® and scoop the batter in each one of them. Sprinkle with the Lotus Cookies crumbled. Bake for 18 minutes at 350F/180C. (Every oven heats differently, monitor your cake from 15min).
Once your Apple Mascarpone Muffins are out of the oven, let them completely cool down before unmolding. Enjoy & Bon Appetit!
