Mandarin Salad with Spiced Marmalade Dressing

This is the Salad you are going to love enjoying all year long ; and especially during the colder months as it is so incredibly Heart Warming!

Ingredients
 

SALAD

  • 3 cups (120 g) Mixed Greens (Washed)
  • 2 oz (55 g) goat cheese
  • 1/4 cup (25 g) sun-dried cranberries
  • 1/4 cup (25 g) pecans
  • 1 mandarin (Cut in half)

SPICED MARMALADE DRESSING

  • 1 shallot bulb (Chopped)
  • 1/2 cup (120 g) Meyer lemon olive oil
  • 1/4 cup (60 g) citrus balsamic
  • 3 tbsp (60 g) Mandarin Spiced Jam
  • 2 tbsp (30 g) Chipotle Mustard
  • Lavender Salt (Season To Taste)
  • Pepper Mil (Season To Taste)

Instructions
 

  • Add the Mixed Greens to your Serving platter. Set aside.

SPICED MARMALADE DRESSING / ASSEMBLY

  • Cut your shallots in half. Place them directly in your Eco Chop and give it a few pulls to chop it to your liking. Transfer them to a smaller bowl. Set aside.
  • Place all the dressing ingredients (Lemon Olive Oil, Citrus Balsamic, Mandarin Jam, Chipotle Mustard) in the Eco Chop. Give it a few pulls to emulsify the dressing. Taste and adjust to your liking with Salt and Pepper.
  • Just before serving, toss your mixed greens, with the Spiced Marmelade dressing. Add the Goat cheese, Sun-dried Cranberries, Pecans and Mandarin segments. Enjoy and Bon Appétit!
