Mandarin Salad with Spiced Marmalade Dressing

SALAD
- 3 cups (120 g) Mixed Greens (Washed)
- 2 oz (55 g) goat cheese
- 1/4 cup (25 g) sun-dried cranberries
- 1/4 cup (25 g) pecans
- 1 mandarin (Cut in half)
SPICED MARMALADE DRESSING
- 1 shallot bulb (Chopped)
- 1/2 cup (120 g) Meyer lemon olive oil
- 1/4 cup (60 g) citrus balsamic
- 3 tbsp (60 g) Mandarin Spiced Jam
- 2 tbsp (30 g) Chipotle Mustard
- Lavender Salt (Season To Taste)
- Pepper Mil (Season To Taste)
Instructions
- Add the Mixed Greens to your Serving platter. Set aside.
SPICED MARMALADE DRESSING / ASSEMBLY
- Place all the dressing ingredients (Lemon Olive Oil, Citrus Balsamic, Mandarin Jam, Chipotle Mustard) in the Eco Chop. Give it a few pulls to emulsify the dressing. Taste and adjust to your liking with Salt and Pepper.
- Just before serving, toss your mixed greens, with the Spiced Marmelade dressing. Add the Goat cheese, Sun-dried Cranberries, Pecans and Mandarin segments. Enjoy and Bon Appétit!
