Lime Almond Financier Cakes

One of my favorite French Pastries, is truly the Financier. A little cake baked essentially with butter, almond flour, icing sugar and egg whites.

What is wonderful about making Financiers, is that you can mix and match different ingredients, and it’s pretty fun to make them in cute and tiny molds as my bon COOK Molds & Trays.

Lime Almond Financier Cakes

The delicate buttery flavor of these French Almonds Cakes are perfect to be enjoyed anytime of the year! Even better with some Lime!

Ingredients
 

  • 1 lime (Zest + Juice)
  • 7 tbsp (100 g) butter (Melted)
  • 3/4 cup (90 g) powdered sugar
  • 1 cup (115 g) almond flour
  • 1/3 cup (80 g) egg whites (About 3 egg whites)
  • 1/4 cup (30 g) all-purpose flour

Instructions
 

LIME ALMOND CAKES

  • Place butter in a small sauce pan and heat on low until melted. Set aside.
  • In a mixing bowl, whisk together the powdered sugar and almond flour. Add the egg whites, then the all-purpose flour, the cooled brown butter, and whisk gently until smooth. Fold the lime zest and juice.
    • Save

BAKE!

  • Bake for 20 minutes at 350F/180C. (Every oven heats differently, monitor your financiers from 15min). It is ready when the toothpick inserted comes out clean.

  • Once your Lime Almond Financiers aCakes re out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy! Bon Appétit!
