Lavender Honey Baked Carrots
Alright, who could resist rainbow carrots? I sure couldn’t the last time I went to the Farmer’s Market.
I’ve been making baked carrots for many years, but it was not until I came across Sophie’s Instagram, that I found a recipe which wowed me. The secret, is to bring honey, oil and herbs to a boil and then pour the mixture over the carrots.
It is so delicious, I could eat it everyday. This is her recipe which I know you will enjoy.

Lavender Honey Baked Carrots
This tasteful baked carrots recipe will elevate any main course you make year round.
Equipment
Ingredients
- 1 bunch of (botte) carrots
- 2 tbsp Lavender Honey (LINK under Equipment)
- 3 tbsp Meyer lemon oil (LINK under Equipment)
- 1 tsp Rosemary, Basil, Thyme herbs (LINK under Equipment)
Instructions
- Preheat oven at 400F/200C.
- Rince the carrots under cold water for a few minutes, towel dry, then using the peeler remove the skin. Cut the top leaving 1"/2cm for decoration.
- Place the carrots on the Flexipan®. Set aside.
- In a small sauce pan, using a spatula mix honey, oil, herbs and heat on low until melted.
- Pour the honey mixture over the carrots. Using tongs ensure that the entire surface is covered. I prefer to use my hands (Be careful it is very hot).
- Bake for 30 minutes at 400F/200C. (Every oven heats differently, monitor your carrots from 25min). Using a fork, check for tenderness.
- Once your carrots are out of the oven, slide them onto a plate. Then, Serve and Enjoy!
