Greek Herb Chicken with Kumquats
I am always very excited to visit my home in Crete because my Mom has a beautiful Kumquat tree. I know many do not care for that fruit much but I love it. The fruits are always so tasty and beautiful.
This recipe is super easy to make. I hope you will enjoy it as much as we did!

Greek Herb Chicken with Kumquats
Equipment
Ingredients
- 10 kumquats (Sliced)
- 1 red onion (Sliced into Quarters)
- 2 potatoes (Diced)
- 1 orange (Juice Only)
- 4 Tbsp (55 g) Greek Olive oil
- 2 Tbsp (35 g) Greek Feta Herbs
- Lavender Salt
- Pepper Mill
- 3 chicken legs
Instructions
- Place your Grande Round Flexipan® Mold on the top of your Medium perforated baking sheet.
- Preheat oven to 400F/200C.
CHICKEN PREPARATION
- Wash and pat dry your kumquats. Slice them into circles and remove the peeps. Add them directly to your mixing bowl.
- Then, cut your red onions into small quarters and dice your potatoes (skin off). Add them to your mixing bowl as well.
- Pour the orange juice, Greek olive oil and Greek herbs. Add your chicken legs, season with Salt and Pepper. Toss to coat and transfer your Flexipan®.
BAKE!
- Bake for 40 minutes at 400F/200C. (Every oven heats differently, monitor your chicken from 35min). Use the Digital Thermometer to ensure the chicken is cooked through at 165°F/75C.
- Once your Greek herb Chicken with Kumquats is out of the oven, let it sit for 10 minutes, Then, Serve and Enjoy! Bon appétit!
