Wash and pat dry your kumquats. Slice them into circles and remove the peeps. Add them directly to your mixing bowl.
Then, cut your red onions into small quarters and dice your potatoes (skin off). Add them to your mixing bowl as well.
Pour the orange juice, Greek olive oil and Greek herbs. Add your chicken legs, season with Salt and Pepper. Toss to coat and transfer your Flexipan®.
BAKE!
Bake for 40 minutes at 400F/200C. (Every oven heats differently, monitor your chicken from 35min). Use the Digital Thermometer to ensure the chicken is cooked through at 165°F/75C.
