Fresh Mozzarella Chicken with Roasted Tomatoes

Fresh Mozzarella Chicken with Roasted Tomatoes
Equipment
Ingredients
- 2 Tbsp (30 g) Rosemary Olive Oil
- 1 Tbsp (7 g) Rosemary, Basil, Thyme herbs
- 3 tomatoes (Sliced)
- 6 chicken thighs
- Truffle Salt
- Pepper Mil
- 6 sliced mozzarella
- 2 Tbsp (30 g) Barrel Aged Traditional Balsamic
Instructions
- Place the Rectangular Flexipat® Tray on the top of your Medium perforated baking sheet. Set Aside.
- Preheat oven to 400F/200C.
CHICKEN PREPARATION
- In a mixing bowl, whisk together the Rosemary oil and Rosemary Basil Thyme Herb Blend. Add your sliced tomatoes, chicken thighs, season with Salt and Pepper. Toss to coat
- Transfer your Flexipat®. Laying the chicken on top of the tomatoes.
BAKE!
- Bake for 20 minutes at 400F/200C. Remove from oven and place a slice of mozzarella over each chicken thigh. Bake until cheese melts and the Digital Thermometer reads 165°F/75C to ensure the chicken is cooked through.
- Once your Fresh Mozzarella Chicken is out of the oven, let it sit for 10 minutes. Then, drizzle some Traditional Balsamic over and Serve on a bed of arugula. Enjoy! Bon appétit!
