French Vanilla Keto Pancakes
My friend who follows the Keto Diet had asked to make a Keto Friendly meal. I was not sure what to do because of all the restrictions there are. So I took one of my pancake recipe and slowly replaced each non keto ingredients. It was definitely a try and error experience because I needed it to taste good!

French Vanilla Keto Pancakes
Ingredients
- 1/4 cup (55 g) coconut oil (Melted)
- 6 eggs
- 1/4 cup (60 g) monkfruit sweetener
- 3/4 cup (170 g) coconut milk
- 2 Tbsp (30 g) Vanilla Greek Yogurt
- 1 tsp Vanilla Extract
- 1/3 cup (40 g) coconut flour
- 1 Tbsp (15 g) almond flour
- 1/2 tsp (3 g) baking powder
- 1/16 tsp (0.5 g) sea salt
Instructions
- Place the coconut oil in a small sauce pan and heat on medium until melted. Set aside.
- In a mixing bowl, whisk together eggs, monkfruit sweetener, coconut milk, Vanilla Greek Yogurt, Vanilla Extract and melted Coconut Oil.
- Mix in the coconut flour, almond flour, baking powder and salt, until all combined.
- Heat your Pancake pan on Medium-Low 10 minutes prior starting making your pancakes, this will allow the batter to rise and for the coconut flour to absorb the liquids. Then, slightly oil the surface with a kitchen towel.
- Pour one or two scoops of batter in your pan.
- Once one side is cooked, gently flip it over. Cook it for a few seconds more. Then, Serve and Bon Appetit!
