Place the coconut oil in a small sauce pan and heat on medium until melted. Set aside.
In a mixing bowl, whisk together eggs, monkfruit sweetener, coconut milk, Vanilla Greek Yogurt, Vanilla Extract and melted Coconut Oil.
Mix in the coconut flour, almond flour, baking powder and salt, until all combined.
Heat your Pancake pan on Medium-Low 10 minutes prior starting making your pancakes, this will allow the batter to rise and for the coconut flour to absorb the liquids. Then, slightly oil the surface with a kitchen towel.
