French “Crêpes” by Christophe Felder

These Sweet Crêpes from renowned French Chef Christophe Felder are delicious! They are also cooked in butter!

Ingredients
 

CRÊPES

  • 2 cups (250 g) all-purpose flour
  • 3/4 cup (150 g) sugar
  • 1/8 tsp (0.75 g) sea salt
  • 1 tsp (5 g) vanilla bean paste
  • 4 eggs
  • 28 oz (800 g) milk (Lukewarm)
  • 2 Tbsp (30 g) Grand Marnier (Chef uses Cointreau )
  • 2 Tbsp (30 g) vegetable oil

COOKING

  • 3 1/2 Tbsp (50 g) butter (For Pancake Pan)

Instructions
 

CRÊPES PREPARATION

  • Place milk in a medium sauce pan and heat on low until lukewarm. Set aside.
  • In a mixing bowl, whisk together the all-purpose flour, sugar and salt. Make a well ; add the vanilla bean paste and the eggs one at a time. Gently start mixing inwards going outwards with your mini whisk. Add the the warm milk, a splash at a time while continuing mixing. Finally, add the dark Rum. Mix until it is all incorporated.

REST

  • Refrigerate your batter covered with a plastic wrap for about 1 hour.
    • Save
  • Then, add the vegetable oil and mix well.

COOK!

  • Heat your Pancake pan on Medium 5 minutes prior starting making your "Crêpes".
  • Add a little bit of butter. When melted, pour one large scoop of batter in your pan, spreading it over with your spatula.

  • Once one side is cooked, flip it over. Cook it for a few seconds more. Then, serve. Enjoy & Bon Appétit!
