Curry Zucchini Croque Monsieur
Today, I am sharing a very simple and yet delicious Croque Monsieur Recipe which I found on Lauren’s Blog (@lolotambouille). The flavors from the courgettes with the curry is quite Amazing. Of course, you will find Lauren’s recipe right HERE!

Curry Zucchini Croque Monsieur

Ingredients
- 2 Yellow zucchini (Medium, Thinly Sliced)
- 1 tbsp (15 g) Rosemary Olive Oil
- 2 eggs
- 1 cup (260 g) Evaporated Milk (Nestlé Carnation )
- 1 tsp (2 g) Curry Powder
- 3/4 cup (85 g) shredded mozzarella
- 8 Buttermilk bread (Sliced)
Instructions
- Preheat oven at 350F/180C.
- Using the Mandoline (on set-up 1), thinly slice your Zucchini. Set aside.
- Heat a frying pan on medium. Once hot, add the Rosemary oil. Cook your Zucchini until soft and golden for about 5 minutes or less.
- In your mixing bowl, whisk together the Eggs, Evaporated Milk, Curry powder and shredded Mozzarella. Set aside.
- Place your Tablette Flexipan® Mold on the top of your medium perforated baking sheet.
- Scoop about 1/3 of your batter into your Flexipan®, just enough to cover the bottom of the mold. Then, add the four slices of Buttermilk Bread. Cover with a full layer of your Zucchini Preparation. Add the second 1/3 of the batter. Cover with the last 4 pieces of bread and finish with the last 1/3 of the batter.
- Bake for 30 minutes at 350F/180C. (Every oven heats differently, monitor your Croque Monsieur from 25min)
- Once your Curry Zucchini Croque Monsieur is out of the oven, let it cool down for about 10min. Then, Unmold directly onto your serving plate. Enjoy! Bon Appétit!
