Chocolate and Almond Macaron Cookies (Schatzy) Bredele 2022
There is one person who knows so much about Christmas Cookies from Alsace is Yolande (@patchouka67). Every year, I like to see what she has made and what is new. If you did not know, Bredele are a huge Christmas baking tradition in Alsace, France. Of course, you will find Yolande’s recipe right HERE!

Chocolate and Almond Macaron Cookies (Schatzy) Bredele 2022
Ingredients
- 1 1/3 cups (125 g) sliced almonds
- 2/3 cup (125 g) dark chocolate chips
- 1/2 tsp (1 g) ground cinnamon
- 2 (60 g) egg whites
- 2/3 cup (130 g) sugar
- 2 Tbsp (10 g) unsweetened cocoa powder
Instructions
- Place your Large bonMAT™ on the top of your Large Perforated Baking Sheet. Set Aside.
ALMOND AND CHOCOLATE MACARON COOKIES
- In a mixing bowl, mix the sliced almonds, dark chocolate chips and ground cinnamon together. Set aside.
- In another mixing bowl, beat the egg whites until stiff peaks. Halfway, add the sugar and unsweetened cocoa powder while continuing beating. Then, using a spatula carefully fold it into your almond preparation.
BAKE!
- Preheat oven to 300F/150C. Bake for 30 minutes (Every oven heats differently, monitor your cookies from 25min). It is ready when the meringue is formed.
- Once your hocolate and Almond Macaron Cookies are out of the oven, let them cool down completely on your baking sheet. When ready, slide them onto a serving plate. Enjoy & Bon Appétit!
- N.B. Storage is best when placed in a metal box.
