Chocolate Almond Financiers
By now, I am sure you know how much I love baking financiers.
If you have never had one, you are missing out and I think this recipe might change your mind, because they are divine!
Who does not know Olivier? Well, if you don’t that’s about to change. I’ve always enjoyed his baking and sense of humor for many years now. He is a Chemistry Teacher by day and a Baker at night. And when he is neither Teaching or Baking you’ll find him at the Gym. Olivier made this recipe a couple of days ago, and I had to share.

Chocolate Almond Financiers

Ingredients
- 4 oz (120 g) butter (Brown Butter, melted)
- 1 oz (30 g) cocoa powder (unsweetened)
- 3.5 oz (100 g) icing sugar (sifted)
- 1.5 oz (40 g) flour (GF or regular) (sifted)
- 2 oz (50 g) almond flour (sifted)
- 2/3 cup (160 g) egg whites (room temperature)
Instructions
- Preheat oven at 350F/180C.
- Place butter in a small sauce pan and heat on low until melted. Then, continue to heat until there are no more bubbles coming up and the whistling has reduced (about 5-8min). Pass your brown butter through the sift. Set aside.
- In a mixing bowl, whisk together, cocoa powder, icing sugar, flour and almond flour.
- Using a spatula carefully fold in the egg whites and add the brown butter.
- Pour your batter into the flexipan® with the mini ladle.
- Bake for 15 minutes at 350F/180C. (Every oven heats differently, monitor your financiers from 10min)
- Once your financiers are out of the oven, let them cool down for about 10min. Then, Unmold, Serve and Enjoy!
