Carrots & Broccoli Tots (Gluten Free)

This incredible recipe was put together from our Amazing team of Chefs at bon COOK™. The original recipe calls for Broccoli only, so I doubled it and used some carrots which need some love. And let me tell you it was pretty delicious!

Carrots & Broccoli Tots (Gluten Free)

These Colorful Gluten Free Carrots and Broccoli Tots will make everyone around your dining table eat their vegetables!

Ingredients
 

  • 1/2 Lb (225 g) Fresh Carrots (Peeled)
  • 1/2 Lb (225 g) Frozen Broccoli
  • 4 eggs (Divide by 2 for each preparation)
  • 2 tbsp (30 g) Pesto Parmesan Oil (Divide by 2 for each preparation)
  • 8 tbsp (55 g) almond flour (Divide by 2 for each preparation)
  • 2 tsp (10 g) Roasted Onion and Red Pepper Herb blend (Divide by 2 for each preparation)
  • 1 tsp (3 g) garlic powder (Divide by 2 for each preparation)
  • 1 cup (100 g) parmesan cheese (Divide by 2 for each preparation)
  • 1 cup (115 g) grated cheese (Divide by 2 for each preparation)
  • Lavender Salt (Season to Taste)
  • Pepper Mil (Season to Taste)

Instructions
 

  • Preheat oven to 400F/200C.
  • Place your peeled Carrots and Frozen Broccoli in your Medium Round Flexipan. Cover with your Octogonal bonMAT™. Then, cook for 3 minutes in your Microwave.
  • Split all ingredients between 2 mixing bowls (Eggs, Parmesan Oil, Almond Flour, Roasted Onion Blend, Garlic Powder, Parmesan Cheese and Shredded Cheese). Whisk all of them together. Then, Add the Lavender Salt and Pepper, Season to Taste.
  • Chop the cooled Broccoli in your Eco Chop. Mix it with your first preparation. Then, repeat the same step with your cooled carrots.
  • Using your mini Ladle, scoop the batter into each well of your Flexipan®. Don't hesitate to fill them completely, flatening the top with your spatula (9 wells for each preparation).
  • Bake for 20 minutes at 400F/200C. (Every oven heats differently, monitor your tots from 15min).
  • Once your Carrots and Broccoli Tots are out of the oven, let them cool down for about 10min. Then, unmold, serve and Enjoy. Bon Appétit!
