Broccoli, Ham and Cheddar Waffles
I discovered the beautiful blog of Michèle (@croquant_fondant_gourmand) through the fantastic Facebook Group “tests de recettes entre blogueurs”. This January 2023 our Group Challenge is to “HONOR ONE BLOGGER” who was picked randomly. I had already made a delicious Corn Flakes Banana Cake from Michèle, but when I saw Carla making these waffles, I had to make them! Of course, you will find Michèle recipe right HERE!

Broccoli, Ham and Cheddar Waffles
Equipment
Ingredients
- 5 3/4 oz (160 g) Frozen Broccoli (Mashed )
- 3 Tbsp (40 g) butter (Melted)
- 1 cup (125 g) all-purpose flour
- 2 tsp (6 g) instant yeast (3/4 of 1 packet | US EU 7g)
- 1/2 cup (130 g) milk
- 1 egg
- 3 oz (85 g) sliced ham (Chopped)
- 1 1/2 oz (40 g) Cheddar Mix Cheese (Shredded)
- Lavender Salt (Season to Taste)
- Pepper Mill (Season to Taste)
Instructions
WAFFLES PREPARATION
- Place butter in a small sauce pan and heat on low until melted. Set aside.
- Bring a medium sauce pan of salted water to a boil. Add the frozen broccoli florets and cook, uncovered, until tender, about 8 minutes depending on the size of the florets. When ready remove from the heat. Pass it through the sieve and mash it with a fork. Set aside to cool down.
- In a mixing bowl, beat together the all-purpose flour and instant yeast. Make a well and add the milk, egg and cooled melted butter. Beat on a medium high speed for 1 minute or until it is all incorporated and smooth. Fold the chopped ham, mashed broccoli and shredded cheddar. Season with Salt and Pepper (To Taste).
REST
- Cover your preparation with a plastic wrap and leave it at room temperature for 1 hour.
BAKE!
- Preheat oven to 425F/220C.Place your Waffle Flexipat® Tray on the top of your Medium Perforated Baking Sheet.
- Scoop the batter into the Flexipat® (About 2 scoops per well). Flatten with your offset spatula.
- Bake for 20 minutes at 425F/220C. (Every oven heats differently, monitor your waffles from 18min).
- Once your Broccoli, Ham and Cheddar Waffles are out of the oven, let them cool down for about 1min. Then, flip and serve. Enjoy with your favorite side salad. Bon Appétit!
