Bacon & Boursin Madeleines
I don’t know about yourselves, but I have always loved eating a really nice buttery Madeleine. Although, I am French, growing up internationally, it wasn’t something that was available to me often. So, whenever we would travel back to France for the holidays, I would ritually go to the first Boulangerie and get one (or two if my Mom was not looking…)
On the other hand, Savory Madeleines are newer to me. What is fantastic about them is as long as you have the correct pairing of ingredients, you are set-up for Success.
Today, we are going to bake Bacon and Goat Cheese together, and I would recommend for you to double up the recipe as they will be gone in no time.

Bacon & Boursin Madeleines
Ingredients
- 1/4 cup (50 g) butter (melted)
- 2 eggs
- 1 tbsp warm water (boiled)
- 2 tbsp flour (sifted)
- 1/2 cup (50 g) almond flour
- 1 tsp (5 g) baking powder
- 3.5 oz (100 g) bacon (crumbled)
- 5.2 oz (150 g) Boursin cheese (whipped)
Instructions
- Preheat oven at 350F/180C.
- Place butter in a small sauce pan and heat on low until melted. Set aside.
- Separate egg yolks from egg whites. Gently whisk egg whites with a fork.
- In the mixing bowl, whisk egg yolks with one tbsp of warm water, until fluffy. Add flour, almond flour, baking powder, melted butter and egg whites.
- With a spatula, combine crumbled bacon and Boursin cheese.
- Pour your batter into the flexipan® by spreading gently until smooth.
- Bake for 15 minutes at 350F/180C. (Every oven heats differently, monitor your madeleines from 10min)
- Once your madeleines are out of the oven, let them cool down for about 5min. Then, Unmold, Serve and Enjoy!
