Preheat oven at 350F/180C.
Place butter in a small sauce pan and heat on low until melted. Set aside.
Separate egg yolks from egg whites. Gently whisk egg whites with a fork.
In the mixing bowl, whisk egg yolks with one tbsp of warm water, until fluffy. Add flour, almond flour, baking powder, melted butter and egg whites.
With a spatula, combine crumbled bacon and Boursin cheese.
Pour your batter into the flexipan® by spreading gently until smooth.
Bake for 15 minutes at 350F/180C. (Every oven heats differently, monitor your madeleines from 10min)
Once your madeleines are out of the oven, let them cool down for about 5min. Then, Unmold, Serve and Enjoy!
