Tuna Curry in a Hurry (with Rice)

This Tuna Curry is perfect when you need to prepare something at the last minute and you do not want to compromise on taste!

Ingredients
 

  • 5 oz (140 g) Solid white albacore Tuna (1 Tin | In Water | Drained)
  • 1 cup (185 g) jasmine rice
  • 1 red onion (Thinly sliced)
  • 1 Tbsp (15 g) olive oil
  • 1 Tbsp (6 g) Curry Powder
  • 3/4 cup (180 g) heavy whipping cream
  • 2 Tbsp (20 g) sliced almonds (My personal addition)
  • Sel Gris Mill (Season to Taste)
  • Pepper Mill (Season to Taste)

Instructions
 

RICE PREPARATION

  • Cook your rice as indicated on the packet. 10 minutes for me.

CURRY PREPARATION

  • While your rice is cooking, prepare your curry.
  • Peel and remove the extremities of your red onion. Slice it, using your Mandoline, on the thinnest setting. Set aside.
  • Heat a large frying pan on medium-high. Once hot, pour the olive oil and add your sliced onions. Cover for 1 minutes, the onion will soften.
  • Add your curry powder. Season with Salt and Pepper (to taste). Then, add the tuna in pieces and heavy whipping cream. Gently mix and let it simmer for 3-5 minutes.

ASSEMBLY

  • Add the drained rice to your plate and serve your curry on top. I also added sliced almonds and it was delicious. Enjoy & Bon Appétit!
