1tbsp(20g)Lavender Honey
1/2tsp(2.5g)vanilla bean paste
MASCARPONE CREAM
1/4cup(60g)heavy whipping cream
6oz(170g)mascarpone(Softened, At Room Temperature)
1tsp(5g)vanilla bean paste
1/3cup(40g)confectioners sugar

N.B. French Meringue are best kept in a closed metal container.
STRAWBERRY FILLING
In a sauce pan, heat on medium the Strawberries, with the Honey and the Vanilla Bean Paste. Continue to whisk until the strawberries are just softened. Set aside.
MASCARPONE CREAM
In your mixing bowl, beat the Heavy Whipping Cream until whipped with soft peaks. Set aside.
Then, in a separate bowl beat the Mascarpone Cheese until creamy. Gradually add the Confectioners Sugar and Vanilla Bean Paste Mix until smooth.
Gently fold the Whipped Cream to your Mascarpone Preparation. Transfer it to your Piping Bag with the Star Tip on.
ASSEMBLY
On your serving plate, add one French Meringue upside-down, then a layer of cream with a layer of Strawberries and another layer of cream. Place another French Meringue on top and voilà! Enjoy & Bon Appétit!
