This savory quick, one bowl, bread with Smoked Salmon, Feta Cheese and Dill tastes like a Summer vacation around the Mediterranean Sea. Made without yeast, you do not have to wait around for it to rise: Mix it, bake it and enjoy it as a light meal with a side salad or as an appetizer at your next Summer gathering!
Line a 9.5" x 3.5" Baking Loaf (24 x 9 cm) like you would usually do, set aside. NOTE: For this recipe, I used my Loaf Mold placed on top of a medium perforated baking sheet. Set aside.
Preheat oven to 350℉/180℃.
SAVORY QUICK BREAD PREPARATION
In a mixing bowl, whisk together the all-purpose flour, baking powder and pepper. Make a well, add the eggs and mix in the olive oil together with the lukewarm milk, orange zest, and orange juice, until combined. NOTE: Keep the remaining half of the orange for decoration.
5.29 oz all-purpose flour, 1 tsp baking powder, Pepper, 3 eggs, 4 oz olive oil, 3.53 oz milk, 1 orange zest, 1.06 oz orange juice
Add the smoked salmon, feta cheese, shredded cheese and dill. Fold until coated.
5.29 oz smoked salmon, 3.53 oz Feta Cheese, 1.76 oz shredded cheese, 1 Tbsp dill
Pour the batter into your prepared loaf. Thinly slice the remaining half of the orange and add the supremes on top of the loaf.
BAKE!
Bake for 30 minutes at 350℉/180℃. (Every oven heats differently, monitor your cake from 28 minutes). It is ready when the toothpick inserted comes out clean or with little to no crumbs.
Once your Savory Quick Bread is out of the oven, let it cool down for 10 minutes, then unmold onto a cooling rack. Serve warm or at room temperature with side salad or as is. Enjoy and Bon Appétit!
