From the cauldron comes a crown that’s pure witchcraft: Purple Sweet Potato Banana Bread. Naturally violet and eerily soft, it is cloaked in dreamy pink frosting made from purple carrots and sprinkled with a touch of witchy sparkle. Sweet, spooky, and perfectly enchanted for the Season of the Witch.
Wash the purple sweet potato under cold water then add it to a sauce pan filled with cold water. Bring it to a gentle simmer and cook it for about 20 minutes on a medium low heat or until fork tender. Set aside to cool down.

Careful peel the sweet potatoes and bananas. Mash them together using a fork or a blender for a smoother texture.
15 oz overripe bananas
In a mixing bowl, cream the softened butter together with the light brown sugar and granulated sugar until light and fluffy, about 2 minutes.
4 oz butter, 3.53 oz light brown sugar, 3.53 oz granulated sugar
Beat in the eggs, then add the mashed banana/sweet potato mixture and vanilla bean paste. Mix until combined.NOTE:It will look a little coagulated at this point, it is perfectly fine.

Fold the all-purpose flour, baking soda, cardamom and sea salt, until just combined.NOTE:The batter will be thick at this stage.
8.82 oz all-purpose flour, 1 tsp baking soda, 1 tsp ground cardamom, 1/2 tsp sea salt
Pour the batter into the prepared bundt cake tin.
BAKE!
Bake for 25 minutes at 350℉/180℃. (Every oven heats differently, monitor your cake from 22 minutes). It is ready when the toothpick inserted comes out clean or with little to no crumbs.
Once your Purple Sweet Potato Banana Bread is out of the oven, let it cool down for a couple of minutes in the mold before unmolding onto your service platter.
PINK MAPLE GLAZE PREPARATION
Place butter in a small sauce pan and heat on low until melted.
In a small mixing bowl, add the warm melted butter. Mix it together with the maple syrup, powdered sugar, vanilla bean paste, food coloring and sea salt until smooth.

DECORATION
