Ingredients
 

PURPLE SWEET POTATO BANANA BREAD

  • purple sweet potato (1 Large)
  • 15 oz (425 g) overripe bananas (3 Large | Mashed)
  • 4 oz (115 g) butter (Softened | At Room Temperature)
  • 3.53 oz (100 g) light brown sugar
  • 3.53 oz (100 g) granulated sugar
  • 2 eggs (Large | At Room Temperature)
  • 1 tsp (5 g) vanilla bean paste
  • 8.82 oz (250 g) all-purpose flour
  • 1 tsp (4 g) baking soda
  • 1 tsp (2 g) ground cardamom
  • 1/2 tsp (3 g) sea salt

PINK MAPLE GLAZE

  • 2 oz (55 g) butter (Melted)
  • 3.53 oz (100 g) maple syrup
  • 6.35 oz (180 g) powdered sugar
  • 1 tsp (5 g) vanilla bean paste
  • 1 tsp (2 g) Natural Food Colorant (Ebony Carrot Powder @suncorefoods)
  • 4 Tbsp (40 g) sprinkles (Witchy Theme)

Instructions
 

PURPLE SWEET POTATO BANANA BREAD PREPARATION

  • Wash the purple sweet potato under cold water then add it to a sauce pan filled with cold water. Bring it to a gentle simmer and cook it for about 20 minutes on a medium low heat or until fork tender. Set aside to cool down.

  • Careful peel the sweet potatoes and bananas. Mash them together using a fork or a blender for a smoother texture.

  • In a mixing bowl, cream the softened butter together with the light brown sugar and granulated sugar until light and fluffy, about 2 minutes.

  • Beat in the eggs, then add the mashed banana/sweet potato mixture and vanilla bean paste. Mix until combined.
    NOTE: It will look a little coagulated at this point, it is perfectly fine.

  • Fold the all-purpose flour, baking soda, cardamom and sea salt, until just combined.
    NOTE: The batter will be thick at this stage.

  • Pour the batter into the prepared bundt cake tin.

BAKE!

  • Bake for 25 minutes at 350℉/180℃. (Every oven heats differently, monitor your cake from 22 minutes). It is ready when the toothpick inserted comes out clean or with little to no crumbs.
  • Once your Purple Sweet Potato Banana Bread is out of the oven, let it cool down for a couple of minutes in the mold before unmolding onto your service platter.

PINK MAPLE GLAZE PREPARATION

  • Place butter in a small sauce pan and heat on low until melted.
  • In a small mixing bowl, add the warm melted butter. Mix it together with the maple syrup, powdered sugar, vanilla bean paste, food coloring and sea salt until smooth.
    2 oz butter, 3.53 oz maple syrup, 6.35 oz powdered sugar, 1 tsp vanilla bean paste, 1 tsp Natural Food Colorant

DECORATION

  • Pour glaze all over the cooled banana bread. Add the sprinkles, here I used a Witchy Theme. Enjoy and "BONE" Appétit!
    NOTE: This banana bread will last 3 days at room temperature.
    4 Tbsp sprinkles
