3 1/2oz(100g)sour cream
1Tbsp(15g)milk(My personal addition)
1Tbsp(15g)olive oil(My personal addition)
3/4cup(90g)whole wheat flour
Sel Gris Mill(Season to Taste)
Pepper Mill(Season to Taste)
Instructions
LEMON CREAM PREPARATION
Wash and chop your chives, transfer it to a small bowl and mix it with the sour cream and lemon juice. Season with Salt and Pepper. Refrigerate until it is time to serve.
POTATO WAFFLES PREPARATION
Place your Waffle Flexipat® Tray on the top of your Medium Perforated Baking Sheet. Set aside.
Wash and peel your potatoes. Cut them into quarters, then grate them using your food processor. Place them on top of a clean cloth in a mixing bowl. Press to drain the water excess. Set aside.
Preheat oven to 400F/200C.
In your clean mixing bowl, using your spatula, fold the grated potatoes with the eggs, sour cream, milk and Olive oil. Add the whole-wheat flour. Season with Salt and Pepper. Mix until combined.
Scoop the batter into the Flexipat® (About 1 scoop per well) and flatten using your offset spatula.
BAKE!
Bake for 20 minutes at 400F/200C. (Every oven heats differently, monitor your waffles from 18min).
Once your Potato Waffles are out of the oven, let them cool down for about 1min. Then, Unmold, Serve with lemon cream and Smoked Salmon on top! Enjoy and Bon Appétit!
