This Pasta Salad with Zucchini & Tomatoes is super fresh and delicious! Best of all it only takes 15 minutes to prepare. Enjoy!

Ingredients
 

PASTA

  • 4 oz (115 g) Orzo Pasta (Cooked al dente)

SALAD

  • 2 zucchini (Large | Washed | Diced)
  • 2 tomatoes (Large | Washed | Diced)
  • 3 Tbsp (42 g) Greek Olive oil
  • 1 (30 g) Lemon Juice (From 1 lemon)
  • 1 Tbsp (5 g) Greek oregano (Original Recipe calls for Dried Basil)
  • Sel Gris Mill
  • Pepper Mill (Timut Pepper is best!)

Instructions
 

PASTA PREPARATION

  • Cook your pasta al dente as indicated on the packet. 10 minutes for me. Drain and set aside to cool down.

SALAD PREPARATION

  • Wash and pat dry your zucchini and tomatoes. Dice them and set aside in your mixing bowl.
  • Add your cooled cooked pasta. Then, add your seasoning: Greek olive oil, lemon juice, dried oregano, salt and pepper (To taste). Toss to coat.
  • Once your Pasta Salad with Zucchini & Tomatoes is ready serve with extra dressing on the side. Enjoy at room temperature or cold. Bon Appétit!
