WAFFLES PREPARATION
Place butter in a small sauce pan and heat on low until melted. Set aside.
In a mixing bowl, mash the leftover mashed potatoes, just to loosen it. Fold the cooled melted butter together with the milk and eggs. Add the parmesan cheese, scallion, cornstarch and baking powder. Mix until combined.
Bake for 25 minutes convection at 415F/220C. (Every oven heats differently, monitor your waffles from 20 minutes). They are ready when golden and cooked through.
