Ingredients
 

  • 14.85 oz (420 g) mashed potatoes (Garlic and Parmesan Mashed Potatoes | Yukon gold)
  • 4 Tbsp (55 g) butter (Melted)
  • 4.25 oz (120 g) milk
  • 2 eggs (Large | At Room Temperature)
  • 2 Tbsp (10 g) parmesan cheese
  • 2 scallion (Thinly Sliced)
  • 1.05 oz (30 g) corn starch
  • 1 tsp (4 g) baking powder

GARLIC AND PARMESAN MASHED POTATOES

  • Anyone who enjoys eating Mashed Potatoes, will love my Garlic and Parmesan Mashed Potatoes recipe. Of course, for this recipe you can choose any leftover mashed potatoes that you have on hand.

WAFFLES PREPARATION

  • Place butter in a small sauce pan and heat on low until melted. Set aside.
  • In a mixing bowl, mash the leftover mashed potatoes, just to loosen it. Fold the cooled melted butter together with the milk and eggs. Add the parmesan cheese, scallion, cornstarch and baking powder. Mix until combined.

BAKE!

  • Scoop the batter into your Waffle Tray (About 2 scoops per well) and flatten using your offset spatula
  • Bake for 25 minutes convection at 415F/220C. (Every oven heats differently, monitor your waffles from 20 minutes). They are ready when golden and cooked through.
  • Once your  Leftover Mashed Potatoes Waffles are out of the oven, let them cool down for about 1 minute. To unmold, flip the tray over. Serve with your favorite side. Enjoy & Bon Appétit!
