Japanese Matcha Buttermilk Pancakes

These Japanese Matcha Pancakes are super light and delicious thanks to the buttermilk! Perfect to be enjoyed with some strawberries!

Ingredients
 

  • 2 tbsp (30 g) butter (Melted)
  • 1 cup (125 g) all-purpose flour
  • 1 tsp (4 g) baking powder
  • 1/4 tsp (1 g) baking soda
  • 2 Tbsp (24 g) sugar
  • 1 Tbsp (15 g) matcha powder
  • 1/16 tsp (0.38 g) sea salt
  • 1 egg
  • 1 cup (240 g) buttermilk (1 cup + 2 Tbsp | 270 g - All together)
  • 2 Tbsp (30 g) buttermilk
  • 1 tsp (4 g) vanilla bean paste
  • 4 oz (115 g) strawberries (Washed | Pat Dry | Thinly Sliced)

Instructions
 

PANCAKES PREPARATION

  • Place butter in a small sauce pan and heat on low until melted. Set aside.
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, matcha powder and sea salt. Make a well and add the egg. Gently start mixing inwards going outwards with your mini whisk. Add the buttermilk, a splash at a time while continuing mixing. Finally, add vanilla bean paste and cooled melted butter. Mix until it is all incorporated. NOTE: Do not overmix to keep them fluffy.

COOK!

  • Heat your Pancake pan on Medium 5 minutes prior starting making your pancakes and slightly oil the surface with a a bit of butter.
  • Pour one or two scoops of batter in your pan. I like to add in mine a few strawberries. NOTE: Matcha pancakes get brown very quickly ; monitor your heat and use butter between each pancakes.
  • Once one side is cooked, flip it over. Cook it for a few seconds more. Then, Serve with extra strawberries. Enjoy and Bon Appétit!
