Icelandic Christmas Cookies "Marens-Kornflexkökur"

Discover the enchanting flavors of Icelandic Christmas with these Marens-Kornflexkökur! Unlike more traditional cookies, these are meringues with soft chocolate cornflakes in the center which makes them a holiday favorite!
Beat the egg whites with an electric mixer, slowly adding the sugar, until stiff peaks form (about 6 minutes).
3.53 oz sugar
Carefully fold in the cornflakes, chocolate chunks and vanilla bean paste.
2 egg whites, 1 tsp vanilla bean paste
Scoop a large tablespoon of meringue directly on your Large Bonmat.
BAKE!
Preheat oven to 300F/150C. Bake for 15minutes (Every oven heats differently, monitor your cookies from 12 minutes). It is ready when crisp on top. NOTE: The Meringue will collapse once out of the oven, that's perfectly normal.
Once your Icelandic Christmas Cookies "Marens-Kornflexkökur" are out of the oven, let them cool down completely on your baking sheet. When ready, slide your cookie onto a serving plate to share or store them in a tin metal box (They stay fresh up to 3 days). Bon Appétit & Happy Holidays!
