Instructions
TRADITIONAL PREPARATION
Add the water into a microwave safe bowl. Heat for 30 seconds or until the mixture is lukewarm. Set aside.
In the bowl of your stand mixer, add the all-purpose flour, olive oil and sea salt. Whisk together to sift for about 30 seconds.
Make a well, add the lukewarm water. Mix with a dough hook for about 2 minutes on the lowest setting of your stand mixer. Then, increase the speed to the second lowest setting and knead for an additional 4 minutes. Your dough is ready once it holds together and no longer sticks to the sides of the bowl.
THERMOMIX PREPARATION
In the bowl of your Thermomix, pour the water (6.17 oz | 175 g). Warm water 99°F-37°C / speed 2.
Add the all-purpose flour (9.88 oz | 280 g), olive oil (1.41 oz | 40 g), baking powder (2 tsp | 0.28 oz | 8 g) and sea salt (1 tsp | 0.14 oz | 4 g). Knead Dough 6 min.
RISE & ASSEMBLY
Scrape your dough out onto the Roul'Pat™. Roll it into a ball with a little bit of flour.
Divide it into 8 segments. Roll each into a ball and flatten it with the palm of your hand. Coat each with some flour, then cover with a clean dosh towel and let it proof for 30 minutes.
When ready, roll each ball into thin large disks ( 8" - 20 cm).
COOK
Heat your frying pan on Medium 5 minutes prior starting making your flour tortillas. Cook until it starts bubbling (about 20 seconds).
Once one side is cooked, flip it over. Cook it for a few seconds more. Then, serve as is or with a garnish. Enjoy & Bon Appétit!
