Greek Honey & Cinnamon Mini Muffins (No Sugar Added)

Freshly made for Rosh Hashanah, these Greek Honey & Cinnamon Mini Muffins are perfectly Sweet. No sugar was added.

Ingredients
 

  • 1/2 cup (170 g) Greek honey
  • 1 tbsp (20 g) Greek honey
  • 7 tbsp (100 g) butter (Melted)
  • 1/3 cup (85 g) milk (Warm)
  • 1 tbsp (15 g) milk (Warm)
  • 1 1/2 cup (185 g) flour
  • 1/2 tbsp (6 g) baking powder
  • 1 egg
  • 1/8 tsp (0.75 g) sea salt
  • 2 tsp (4 g) ground cinnamon (Original recipe calls for 1 tsp)

Instructions
 

  • Preheat oven to 350F/180C.
  • In a medium sauce pan, heat the milk and butter together, by stirring occasionally. Your preparation is ready once the butter has melted and that it is hot and not boiling. Set aside.
  • In a mixing bowl, pour the Honey and whisk your hot Milk/Butter preparation.
  • Combine in the Flour, Baking Powder, Salt and Ground Cinnamon.
  • Then, mix in the egg. Pour your preparation into a Funnel Pitcher. Set aside.
  • Pour the batter into each well of your Flexipan®
  • Bake for 12 minutes at 350F/180C. (Every oven heats differently, monitor your muffins from 10min).
  • Once your Greek Honey & Cinnamon Mini Muffins are out of the oven, let them cool down for about 10min. Then, unmold onto a cooling rack. Enjoy & Bon Appétit!
